the perfect steak (medium)          with rosemary sauce


recipe for 2 people

ingredients

400 g beef steak (2 slices),

2 tsp olive oil,

1 clove of garlic,

⅓ onion,

2 tsp fresh rosemary,

1 tsp red pepper corns,

2 pinches of oregano,

2 pinches of thyme,

1 tbsp balsamic vinegar,

1 tsp honey,

piece of butter 2-3 g,

200 ml water,

salt/pepper,

2 ½ tsp flour (in a bit cold water stirred),

160 g rice

 

how you make it:

 

baste the 2 beef slices with garlic and spice it with pepper

 

stove plate on ↑6/6, warm olive oil (→olive oil), stove plate on ↓2/6 sauté onions (→onion) and after that garlic (→garlic) in a saucepan

 

deglaze with water

 

spice with salt/pepper

 

add balsamic vinegar/honey and stir

 

bring it to a boil and leave it for 5 minutes with lid on

 

add fresh rosemary/red pepper corns and the other spices, stir and leave it with lid on for 10 minutes

 

add butter and in water stirred flour with permanently stirring

 

stove plate on ↓1/6 and leave it with lid on

 

in another pan: stove plate on ↑6/6, warm olive oil

 

stove plate on ↓5/6, roast beef slices on every side for 1 ½ minutes to get their surface brown

 

stove plate on ↓1/6

 

spice the beef slices with a bit of salt before you put them into the saucepan with prepared sauce which is removed from stove plate

 

important:

english rare – you serve the meat at once;

medium - you leave the meat for 2-3 minutes in the saucepan before you serve it; well done – you leave the meat for 6-7 minutes in the saucepan before you serve it;

 

deglaze other pan with a little bit of water, stir and stove plate on ↓0/0

 

then you can serve the beef slices and the prepared rice (→rice cooking)

 

put the the deglazing water of the pan also into the saucepan of prepared sauce, stir and serve it then
