french onion soup

ingredients

1-2 tsp olive oil,

4 onions,

½ clove of garlic,

100 ml white wine,

1 soup cube (10 g),

½ tsp paprika,

⅔ tsp thyme,

1 pinch of rosemary,

2 pinches of oregano,

2 pinches of caraway,

1 -1½ tsp honey,

2 tsp flour,

5-10 g butter,

4 tbsp grated emmental cheese,

salt/pepper,

1120 ml water

 

how you make it:


stove plate on ↑6/6, warm olive oil (→olive oil), stove plate on ↓2/6 sauté in thin rings cut onions (→onion) in a saucepan to get them brown

 

add garlic and sauté it (→garlic)

 

deglaze it with white wine and stir

 

add the rest of water, spice it with salt/pepper, all the other spices/the soup cube and stir

 

stove plate on ↑4/6 to bring it for a short time to a boil

 

stove plate on ↑1/6 and leave it for 20 minutes with lid on

 

then test, if salt/pepper is alright and add it, if necessary

 

add butter and at last thicken the soup a bit (→how to thicken a sauce)

 

↓0/0 after 1-2 minutes and leave it with lid on for a couple of minutes

 

done!

serve soup with grated emmental cheese and white bread (baguette)
