pasta cozze (mussels)

ingredients

260 g spaghetti (pasta),

2 tsp olive oil,

150 g mussels without shell,

1 garlic clove,

100 ml white wine,

4 tomatoes (peeled),

1 garlic clove,

1-1½ tsp sugar,

1 dried chili pepper,

2 tsp parsley,

salt/pepper,

5 g butter

 

how you make it:


stove plate on ↑6/6, warm olive oil (→olive oil), stove plate on ↓2/6, sauté garlic (→garlic) in a saucepan

 

stove plate on ↓2/6, deglaze with tomatoes, stir and simmer for 2-3 minutes with lid on

 

add sugar, salt/pepper/dried chili pepper, stir and simmer

 

stove plate on ↓1/6, leave it again with lid on for 10-15 minutes

 

stove plate on ↑6/6, warm olive oil in another saucepan(→olive oil), stove plate on ↓2/6, sauté garlic (→garlic)

 

deglaze with white wine, stir and simmer for 2-3 minutes with lid on

 

add salt/pepper, stir and simmer

 

stove plate on ↓1/6, add mussels and leave it again with lid on for circa 10 minutes

 

mix both sauces and simmer with lid on for 10 minutes, then stove plate on ↓0/0

 

in the meantime: prepare pasta (→pasta)

 

drain pasta, add no oil! (tip: 1-2 minutes earlier than stated on pack because of simmering later in mussel sauce)

 

stove plate on ↓0/0, add butter/parsley to the mussel sauce before you mix sauce and pasta

 

stir it on lukewarm stove plate, until it comes to a good connection
