hungarian goulash

ingredients

250 g elbow (pasta),

265 g beef (cut in big cubes),

1 onion,

⅓ clove of garlic,

80 ml red wine,

1-1½ tsp paprika,

¼ tsp hot paprika,

½ sugar,

5 g butter,

320 ml water,

1-1½ tsp flour,

salt/pepper


how you make it:


stove plate on ↑6/6, warm olive oil (→olive oil), stove plate on ↓2/6 sauté onions (→onion) and after that garlic (→garlic) in a saucepan

 

deglaze it with red wine and stir

 

spice it with salt/pepper and all the other spices, stir and leave it for a few minutes with lid on

 

stove plate on ↑6/6, add the water and bring it to a boil with lid on

 

stove plate on ↓1/6

 

leave it for a few minutes with lid on

 

then add the meat and now leave it for 2½ hours with lid on, so that it is permanently simmering (the meat keeps so moist and becomes really tender!)

 

then test, if salt/pepper/hot paprika is alright and add it, if necessary

 

now add butter

 

at last thicken the sauce (→how to thicken a sauce)

 

↓0/0 after 1-2 minutes and leave it with lid on for a couple of minutes

 

serve it with elbow (pasta)
